These pastries are all about the dates. Use the best quality dates you can get. They look like ma'moul but the dough is lighter and we fill them with Turkish delight, nuts, dates or a paste made from honey and butter called 'agamiya. Ingredients of Ma'moul (Date's biscuits)
- You need 500 g of flour or 300 g flour and 200 g semolina coarse.
- You need 200 g of butter in room temperature.
- Prepare 60 g of powder sugar.
- You need 1/4 cup of oil.
- You need 50 g of warm milk or less.
Maamoul are buttery date filled middle eastern cookies that will melt in your mouth and are utterly scrumptious. Naturally sweetened with dates these have minimal added sugar. They are popular at Eid, Christmas and other holidays. But I always assemble and freeze them and bake as needed.
Ma'moul (Date's biscuits) instructions
- Mix butter and sugar untill creamy..
- Add flour, oil and milk. Mix well untill you have a smooth dough..
- Cut the dough into equal balls..
- Stuff each ball with a ball of date mix (cut dates into small parts and stir them with 2 tbs butter on medium heat untill combined and melt...add sesame and cardamom powder.Let it cool the shape into balls.) Use hand mixer and toothpicks to make these shapes.r.
- Put them in oven at 180 -200 degrees for 15-20 minutes till golden from bottom then broil to golden from above..
I love them fresh out of the oven Eid morning, when you can smell the cookies. Most recipes for making date paste have you grind the dates in a food processor with some oil until they turn into a paste. This is all well and good, but it does make a sticky mess inside your food processor. The biscuit or cookie can be filled with walnut or pistachio or dates. I've included both, the choice is entirely up to you!
