Ingredients of Kaali Dhal/black Urad dal
- Prepare 200 gm of Split black urad.
- Prepare 3 of parts of water atleast (Dhal:water ratio).
- It's 1 of medium onion finely chopped.
- Prepare 3-4 of fat cloves garlic grated.
- Prepare half of inch ginger grated.
- It's 3/4 teaspoon of turmeric powder.
- Prepare 3/4 teaspoon of hing/Asafoetida.
- You need 1 teaspoon of mild red chilli powder.
- Prepare 1 teaspoon of coriander powder.
- You need 1/2 teaspoon of garam masala.
- Prepare 3/4 of th cup of whole milk.
- You need of Salt(as required).
- It's of Ghee or Oil to temper.
- You need 1 teaspoon of Cumin seeds.
- You need 1 of green chilli finely chopped.
- You need 1 pinch of sugar.
- Prepare A few of coriander leaves and onion slices to garnish.
This dish is found all over India. In the north, it is called "maa ki dal" and is made with the starchy and wholesome urad dal (black lentils) but in the south it is made with toor dal (yellow lentils), which have a very low. Kaali Dhal/black Urad dal step by step
- Pressure cook the dhal along with grated garlic, grated ginger, finely chopped onions, a pinch of hing, kashmiri chilli powder & turmeric powder for 20-25 minutes till soft. If you do not have a pressure cooker, I would suggest soaking the split lentils for about 30 mins atleast and cooking them directly on a pot on medium flame. If you are using the whole black lentil, then please soak for 6-8 hours..
- Once the dhal has cooked to a nice soft texture, allow it to slow cook further in low flame. In another pan, do a tempering with ghee or oil. To hot oil or ghee, add cumin seeds, green chilli and add this to the simmering pot of dhal. Add required salt, sugar and garam masala at this stage..
- Give it all a good mix and allow it cook for a another 5 minutes and then add whole milk. Mix well and cook for 3 more minutes till you start to see a nice creamy consistency..
- Turn off flame and garnish with fresh coriander leaves. Serve with sliced onions..
